Instructions

Toast the Bread:

  • Season the mashed avocado with salt, pepper, and a squeeze of lemon juice, if desired.

Poach the Eggs:

  • Fill a saucepan with water and bring it to a gentle simmer.
  • Add 1 tablespoon of white vinegar to the water. This helps the egg whites to coagulate more easily.
  • Crack one egg into a small bowl or cup.
  • Create a gentle whirlpool in the simmering water by stirring it with a spoon.
  • Carefully slide the egg from the bowl into the center of the whirlpool. Repeat for the second egg.
  • Let the eggs cook for about 3-4 minutes, or until the whites are set but the yolks are still runny.
