HOMEMADE HUMMUS WITH VEGGIE STICKS

Ingredients
For the Hummus
- 1 can (15 oz) chickpeas, drained and rinsed
- 1/4 cup fresh lemon juice (about 1 large lemon)
- 1/4 cup tahini (sesame paste)
- 1 small garlic clove, minced
- 2 tablespoons olive oil
- 1/2 teaspoon ground cumin
- Salt, to taste
- 2-3 tablespoons water (as needed for consistency)
For the Veggie Sticks
- 1 cucumber, sliced into sticks
- 1 bell pepper, cut into strips
- 2-3 carrots, peeled and cut into sticks
- 2-3 celery stalks, cut into sticks
Instructions
Prepare the Hummus:
- In a food processor, combine chickpeas, lemon juice, tahini, minced garlic, olive oil, and cumin. Process until smooth.
- With the processor running, add water a tablespoon at a time until the hummus reaches your desired consistency.
- Taste and adjust seasoning with salt as needed. Process again to combine.
Serve the Hummus:
- Transfer the hummus to a serving bowl. Drizzle with a little extra olive oil and sprinkle with additional cumin or paprika if desired.
Prepare the Veggie Sticks:
- Arrange the cucumber, bell pepper, carrots, and celery sticks on a platter.
