LEMON GARLIC SHRIMP PASTA
Lemon Garlic Shrimp Pasta is a quick, protein-rich dish that's low in fat and full of flavor. It's perfect for busy nights and can be customized with different pasta or veggies.
Ingredients:
- 8 oz linguine or spaghetti
- 1 lb shrimp, peeled and deveined
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1/4 teaspoon red pepper flakes (optional)
- 1/4 cup white wine (or chicken broth)
- 1 lemon, zested and juiced
- 1/4 cup fresh parsley, chopped
- 2 tablespoons butter
- Salt and pepper, to taste
- Grated Parmesan cheese, for serving (optional)
Instructions
Cook the Pasta:
- Cook the pasta according to the package instructions until al dente. Drain and set aside.
Cook the Shrimp:
- In a large skillet, heat olive oil over medium-high heat.
- Add the shrimp and cook for 2-3 minutes on each side until pink and opaque. Remove shrimp from the skillet and set aside.
Prepare the Sauce:
- In the same skillet, add minced garlic and red pepper flakes (if using). Sauté for about 1 minute until fragrant.
- Add the white wine (or chicken broth) and cook for 2-3 minutes until slightly reduced.
- Stir in the lemon zest, lemon juice, and butter. Cook until the butter is melted and the sauce is well combined.
Combine and Serve:
- Return the cooked shrimp to the skillet and toss to coat in the sauce.
- Add the cooked pasta and chopped parsley, tossing everything together until well mixed. Season with salt and pepper to taste.
- Serve immediately with grated Parmesan cheese, if desired.
