LEMON GARLIC SHRIMP PASTA

Ingredients:

  • 8 oz linguine or spaghetti
  • 1 lb shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/4 cup white wine (or chicken broth)
  • 1 lemon, zested and juiced
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons butter
  • Salt and pepper, to taste

Instructions

Cook the Pasta:

  • Cook the pasta according to the package instructions until al dente. Drain and set aside.

Cook the Shrimp:

  • In a large skillet, heat olive oil over medium-high heat.
  • Add the shrimp and cook for 2-3 minutes on each side until pink and opaque. Remove shrimp from the skillet and set aside.

Prepare the Sauce:

  • In the same skillet, add minced garlic and red pepper flakes (if using). Sauté for about 1 minute until fragrant.
  • Add the white wine (or chicken broth) and cook for 2-3 minutes until slightly reduced.
  • Stir in the lemon zest, lemon juice, and butter. Cook until the butter is melted and the sauce is well combined.

Combine and Serve:

  • Return the cooked shrimp to the skillet and toss to coat in the sauce.
  • Add the cooked pasta and chopped parsley, tossing everything together until well mixed. Season with salt and pepper to taste.
  • Serve immediately with grated Parmesan cheese, if desired.
