LEMON POPPY SEED MUFFINS

Ingredients

- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1 tablespoon poppy seeds
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, melted
- 1/2 cup milk
- 2 large eggs
- 2 tablespoons lemon juice (freshly squeezed)
- Zest of 1 lemon

- 1/2 cup powdered sugar
- 2 tablespoons lemon juice
Instructions
Preheat Oven:
- Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease it lightly.
Mix Dry Ingredients:
- In a large bowl, whisk together flour, sugar, poppy seeds, baking powder, baking soda, and salt.
Combine Wet Ingredients:
- In another bowl, whisk together melted butter, milk, eggs, lemon juice, and lemon zest.
Combine Mixtures:
- Add the wet ingredients to the dry ingredients and stir until just combined. Be careful not to overmix.
Fill Muffin Tin:
- Divide the batter evenly among the muffin cups, filling each about 2/3 full.
Bake:
- Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean and the muffins are golden brown.
Cool:
- Allow the muffins to cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
Prepare Lemon Glaze (Optional):
- While the muffins are cooling, whisk together powdered sugar and lemon juice until smooth. Drizzle over the cooled muffins.
