LEMON POPPY SEED MUFFINS

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1 tablespoon poppy seeds
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1/2 cup milk
  • 2 large eggs
  • 2 tablespoons lemon juice (freshly squeezed)
  • Zest of 1 lemon

For the Lemon Glaze (Optional)

  • 1/2 cup powdered sugar
  • 2 tablespoons lemon juice

Instructions

Preheat Oven:

  • Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease it lightly.

Mix Dry Ingredients:

  • In a large bowl, whisk together flour, sugar, poppy seeds, baking powder, baking soda, and salt.

Combine Wet Ingredients:

  • In another bowl, whisk together melted butter, milk, eggs, lemon juice, and lemon zest.

Combine Mixtures:

  • Add the wet ingredients to the dry ingredients and stir until just combined. Be careful not to overmix.

Fill Muffin Tin:

  • Divide the batter evenly among the muffin cups, filling each about 2/3 full.

Bake:

  • Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean and the muffins are golden brown.

Cool:

  • Allow the muffins to cool in the pan for a few minutes before transferring them to a wire rack to cool completely.

Prepare Lemon Glaze (Optional):

  • While the muffins are cooling, whisk together powdered sugar and lemon juice until smooth. Drizzle over the cooled muffins.
